Egg Box Mini Cupcakes

I've been thinking for the last couple of weeks about alternatives to giving Easter eggs this year and then I remembered this idea that I had seen in a cake shop window a few years ago. The mini cupcakes look so cute and are a refreshing change from the mass produced Easter eggs.
I've never made mini cupcakes before and had to have a good search around online to find appropriate recipes. In the end I settled on vanilla cupcakes from The Daily Home and chocolate cupcakes from BBC Food. I did however half each recipe, otherwise I would have ended up with about 100 mini cupcakes...not a bad thing I hear you say!!
The chocolate cupcakes looked particularly tempting as there is buttermilk in the recipe and also double cream in the icing! To finish them off I used some chocolate sprinkles, as well as some mini Easter eggs and chicks. Mini eggs would also work really well. You can't see them in the picture but the cakes are baked in these Hop n' Tweet cupcake cases...they're so adorable and also have tulips around the sides.

These egg box mini cupcakes make a super cute treat...and because they're a homemade gift it shows you care!

  5. I absolutely love this idea. I'm a big fan of baking mini things, and as you might know, love making mini cupcakes too. Must find the time to try and make these before Easter.

The stall went pretty well, actually it's funny this is what you blogged about because I made up tons of egg cartons of mini's and they were the most popular thing from the stall, they were flying off the table! I also often use them to give as gifts to people - they keep the mini's really secure don't they! Did you buy yours especially? I just saved egg cartons up for a few months and recovered them with flowery paper but it took soo long to remove all the sticky labels from them! If I'd have been down south I would have bought some but people don't pay much for cupcakes in North Wales so I had to get creative! I love the look of that chocolate frosting you used, such a great contrast with the pink too!

  11. These are adorable! I love this idea. I really hate throwing some things away...like all of those egg crates that normally are empty the day after I buy them. This is a great use for recycling...and cupcakes are my favorite Easter treat! Thanks for the idea~ Holly
